Another reason why everyone should move to Raleigh

Part of the reason I love living in Raleigh is because I am part of an amazing produce co-op. It is a group of 20ish people and we take turns doing rotating "jobs," each person has a responsibility once every 6 weeks (jobs include shopping and sorting the produce). We buy the produce wholesale, directly from the farmers market, in large cases, and then divide it up and pay for our part. It is a really well established group and I'm soooo glad I'm able to be a part of it. I get a ridiculous amount of fresh produce every week for usually 1/3 of the cost at a grocery store. I also get to order exactly what I want, so it isn't quite like a CSA box where you just get whatever (though that seems kind of fun to me!). The market doesn't always have everything, but I usually get most of what I order.

Anyway, I do get quite a bit of whatever I order, and I've had to get creative at times so that the food doesn't spoil before we are able to eat it. The other day I got about 12 large cucumbers (for just over $1--for all of them) so I decided to make refrigerator pickles. They turned out so well and I LOVE them on sandwiches. Kinsey is a huge fan and just eats them plain (they are a little to vinegary for me to do that).
